Dining Introduction:

The meals on the 'Breeze of Mountain' train are crafted by the team at Silks Place Tainan. Based on the concept of 'Reading the Chiayi-Tainan Map with Your Taste Buds,' the menu combines the local terroir and ingredients of the Chianan Plain with the imagery of the Crown Prince's banquet from a century ago to create an exclusive train dining experience.

Outbound | Crown Prince Feast: Inspired by the century-old Crown Prince banquet, the menu features seasonal ingredients such as Guanmiao bamboo shoots, Jiangjun asparagus, Jiali carrots, Dongshan pumpkins, and Baihe lotus roots. The 'Moon-Reflected Fish Roll' combines milkfish with candied watermelon rind, blending Taiwanese sweet-and-sour flavors with Japanese-style pickles to showcase the delicate layers of the Chianan Plain.

Inbound | Ashe Feast: Rooted in Tainan's traditional banquet cuisine and the 'Ashe' (gentry) banquet culture, this menu presents classic, labor-intensive dishes. The 'Ashe Elegant Delicacies' include signature dishes like crab meatballs, mullet roe, and phoenix leg rolls. The 'Field Fragrance Mud Crab Sticky Rice' layers rich aromas with mud crab, glutinous rice, salted egg yolk, and egg crisps, embodying the spirit of century-old Chinese banquets.
