Hakata

Today's Fukuoka is the product of the fusion of two cities in the year 1889, when the port city of Hakata and the former castle town of Fukuoka were merged into one city called Fukuoka. Hakata remains the name of one of Fukuoka's central districts and of the main railway station.

Hakata ramen refers to a style of tonkotsu ramen originating from the Hakata district of Fukuoka, Japan, characterized by its rich, cloudy pork bone broth and very thin, firm noodles. A key feature is the kaedama system, which allows diners to order extra servings of noodles to add to their existing broth. Key characteristics include a rich, milky, and dense pork bone-based broth called tonkotsu, ultra-thin, straight, and firm noodles made with a high-protein flour and a low-water content that cook very quickly, and a system where you can order extra servings of noodles for an additional cost to add to your soup after you've finished the first portion.

Hakata Wagyu is a Wagyu beef carefully raised over a period of about 20 months in Fukuoka Prefecture after being delivered from various parts in Kyushu as calves. The meat of Hakata Wagyu cattle, which are raised on grains only, is very soft and tender.
