We use a broth made from a mixture of dried bonito flakes and kelp specially prepared by a local dried bonito manufacturer. Our homemade noodles boast a chewy and soft texture. By topping the noodles with freshly shaved dried bonito flakes from Kagoshima Prefecture, finely shaved to 0.01 mm, we have created a udon with a strong umami flavor.
