We purchase fresh fish caught that day from Maizuru. We carefully select rare and high-quality fish to serve to our customers. We also put a little effort into the preparation of the fish. We soak it in seawater to make it juicy, and then soak it overnight in fruits such as grapes and mandarin oranges to give the fish a nice aroma. We also bake the fish in the oven! The fish meat is soft and fluffy. We are also particular about tea, and offer cold-brewed Uji tea purchased from contracted farmers.
