- Store Introduction - 5 minutes from Nakasu-Kawabata Station ◆ The first udon izakaya. A famous restaurant with a warm atmosphere that serves Hakata-style cuisine and fine sake.

Step through the noren curtain of this townhouse-style building located directly opposite Kushida Shrine in the heart of Hakata and you will find a warm and welcoming space. This year marks our 14th year as an "udon izakaya," serving udon at lunchtime and becoming a full-fledged izakaya at night, including the time of our previous store. We offer traditional germ udon noodles, which are handmade every day and are unique to our restaurant, as well as a wide variety of specialty dishes that represent Hakata. Please enjoy a pleasant time with our delicious food and fine sake from all over Japan.

When I opened a restaurant in Hakata, which is said to be the birthplace of udon, I wanted to make Hakata udon that is rooted in history. I was conscious of the noodles from when udon was first created, and researched how to make noodles that would revive the image of wheat flour made by pounding a pestle into a stone mill. I developed an original noodle by mixing wheat germ and named it "Ancient Germ Noodles." In addition, I purchase high-quality ingredients for the soup stock from a bonito flakes company in Kyoto, and I use an original soy sauce made by a local soy sauce manufacturer in Fukuoka.
