Yuki Matsuda was born in Tokyo in 1981. During his university years, he worked part-time at a yakiniku izakaya where he learned the joy of eating and the fun of cooking, and decided to become a chef. He then worked at Aen Mizonokuchi branch for seven years, honing his cooking skills. In particular, as many of the dishes featured vegetables, he pursued how to handle and cook the ingredients in a way that would bring out their original flavor. In 2013, he moved to Aen Shinjuku Isetan Kaikan branch, where he remains to this day.
