  • Making soba dough (~10 minutes) In Fujiya's Oshino Hakkai soba making experience, each person will make their own dough and noodles. (For example, two people do not make one dough.) When kneading the dough, use the belly of your hand to put your weight on it and bring it together. If white powder remains on the surface of the dough, it will not be kneaded properly. Knead vigorously until the entire surface of the dough is creamy. Especially if you are a child, you may not have enough strength, so please cooperate with adults.

  • Roll out the soba dough (~20 minutes) When the dough is finished, sprinkle flour on the surface of the dough. When the surface becomes white, use a rolling pin to roll out the dough thinly. When rolling out the dough, imagine a square shape. Roll out the noodles in a square shape as much as possible so that the length of the noodles is the same no matter where you cut them. The noodles are very thin compared to udon, so you'll need to roll them out until they're almost flat. The dough will stretch smoothly when you put your weight on it, so we recommend stretching it while standing on your knees!

  • Cut the soba dough (~30 minutes) Once the dough is rolled out thinly, fold it so that it fits within the width of your knife. Once you have finished folding it, use a cutting board and a knife to cut it. This is the most difficult process. It's difficult to cut into thin pieces, but once you get used to it, increase your tempo and try your best to finish it within 10 minutes. Soba noodles are quite thin and difficult to cut, so the staff will show you samples. This is the most difficult step, but once you've finished cutting it, you're almost ready to eat it!
