Our yakitori is made from healthy Shingen chickens that have been raised on the bounty of the Southern Alps and slaughtered that morning, and is carefully prepared one by one by a craftsman with 15 years of experience. Starting with the classic yakitori cuts of "thigh and breast," "neck chicken" with juicy fat and firm meat, and "heart" with a plump texture, each cut is grilled over Kishu Binchotan charcoal at the perfect temperature to ensure that the flavor is not lost.
