Aichi Prefecture has been a thriving sake brewery for a thousand years, with approximately 40 breweries currently boasting the seventh-highest production volume in Japan. In Gifu Prefecture, meltwater from the Northern Alps, Mt. Ibuki, and Mt. Ena creates rivers such as the Nagara River and the Kiso River, and the clear underground water from these streams produces delicious sake.
