Enter a real, operating Ligurian oil mill, a workplace where oil is produced and told starting from the land.
The activity begins and ends at the mill, which is easily accessible from Sestri Levante by your own means of transport.
The experience begins with a brief introduction to extra-virgin olive oil and the role of olive growing in the Ligurian landscape. You will then visit the cooperative's demonstration olive grove, which is used by olive growers for training activities on pruning, care, and cultivation of olive trees.
The route continues inside the oil mill, where you will discover the processing areas and the reconstruction of an old traditional 18th-century oil mill with a stone millstone.
This is not a museum, but a real production site, open to visitors through a guided experience.
The central part of the activity is a sensory workshop led by a professional oil taster and licensed tour guide. You will taste 4 different oils, comparing aromas, flavors, qualities and defects, to learn how to recognize a good extra virgin olive oil.
The experience includes water, a glass of local wine, Ligurian focaccia, and bruschetta with basil pesto, red pesto, and olive paste.
At the end, you will have simple and practical tools to better choose oil in everyday life and interpret extra-virgin olive oil as an expression of the Italian land, work, and culture.
