Begin with a welcome glass of “Selim” Spumante brut from Cantina De Conciliis, a sparkling wine made from Aglianico and Falanghina grapes. Light and fresh, it features fruity and elegant notes, perfect for starting a meal or for aperitifs. Pair it with fried prawns in panko bread with wild fennel mayonnaise.
Next, taste Lacryma Christi Vesuvio Bianco d.o.c. from Cantina Villa Dora, a white wine symbol of Vesuvius. A blend of Coda di Volpe and Falanghina grapes, it has a deep straw yellow color and spicy notes. Thanks to its mineral flavor, it pairs well with both seafood and delicate land dishes. Enjoy it with grilled and marinated cuttlefish with olive oil, Sorrento lemon, and mullet bottarga.
Continue with Greco di Tufo d.o.c.g Irpinia from Cantina San Paolo, one of the oldest and most typical white grape varieties of the region. With a straw yellow color and golden reflections, it has a significant structure that makes it a full-bodied and very persistent wine, yet balanced. Its qualities make it a versatile wine, ideal for various pairings such as seafood, vegetables, white meats, and soft cheeses. Pair it with grilled octopus served with sweet potato parmentier and Neapolitan tarallo crumble.
Then, taste Lacryma Christi Vesuvio rosso d.o.c. from Cantina Villa Dora, a blend of Aglianico and Piedirosso grapes made unique by the minerality of the Vesuvian terroir. With a deep ruby red color, it has red fruit aromas due to Aglianico and a slight spiciness. Like the white Lacryma, it has mineral and fresh notes. On the palate, it has a not too strong tannin due to 10 months of aging in barrique. Ideal with land dishes and cold cuts. Pair it with a mixed cold cuts platter.
Finally, taste Aglianico Irpinia doc. from Cantina San Paolo, one of the most important and representative grape varieties of southern Italy. The main organoleptic property of this grape variety is its structure and the flavor of red fruits, present both on the nose and on the palate, which then ends with light notes of spices and licorice. The light passage in French oak barrique for just 4 months completes it, making it a soft and pleasant wine to savor. Being a very full-bodied wine, it is excellent with flavorful and strong first courses, red meats, and cheeses. Pair it with a mixed cheese platter.
