Lazio is the only region in Italy with four distinct DOP-certified olive oil designations, each shaped by a radically different landscape: volcanic hills, ancient river valleys, coastal scrubland, and fertile plains. In this underground setting, you will taste all four side by side — an experience that simply does not exist elsewhere in Rome.
Your expert host will guide you through the professional tasting method used by certified olive oil sommeliers. You will learn to warm the glass with your palms to unlock the oil's polyphenols, then use the "stripping" technique — drawing the oil across your palate to fully nebulize its flavours. By the end, you will be able to identify fruity, bitter, and pungent notes with real confidence, and understand why those sensations are actually markers of antioxidant richness and quality.
The four oils tell four very different stories. The Sabina DOP from the hills north of Rome is silky and elegant, with artichoke and fresh grass. The Tuscia DOP, born from volcanic soils near Viterbo, is clean and mineral with a distinctive almond finish. The Canino DOP from the wild Maremma coast is bold and persistent, with wild thistle and black pepper. The Colline Pontine DOP, made from the ancient Itrana olive variety near Latina, delivers an explosive aroma of green tomato and basil unlike anything else in the region.
Each oil is paired with a different artisan sourdough bread, chosen to complement its character — soft and open-crumbed, wood-fired and toasted, or crispy and naturally savory. You will also learn the art of food pairing and why the right bread transforms the tasting experience entirely.
The session closes with a glass of Frascati Superiore DOCG, Lazio's signature white wine, selected for its volcanic minerality and its ability to reset the palate between tastings.
