The soba noodles served here are "gensoba" (whole-grain buckwheat) carefully selected by the owner. They are ground in a stone mill in the restaurant every day and hand-made on the same day, giving them a wonderful aroma and a rich flavor. In addition to the simple "mori soba," we also recommend the "kamo seiro" (soba noodles in a bamboo steamer) made with carefully selected domestic duck.
