Our beef tongue uses only the tenderest parts of the highest-grade brand beef. We grill carefully selected ingredients, pouring in all the skills, passion, and expertise the owner acquired during 10 years of training at a specialty shop in Sendai. To highlight the star of the dish, the beef tongue, we use high-heat Iwate oak charcoal. We serve it with the perfect balance of a crispy exterior and a chewy, succulent interior.
It is handmade from scratch in our store and simmered slowly at low temperature. In Europe, the US and Korea, oxtail soup has long been known as the king of soups, as it is said to promote longevity and invigorate the body. It is rich in nutrients such as collagen, protein and iron, and is effective for nourishing and invigorating the body and recovering from fatigue. It is also recommended as a final dish at a party, and many people use it as a hangover remedy as a last resort.
The chef, who has been working with beef tongue for nearly 10 years, serves the best cuts of beef tongue at any given time with the highest quality. The recommended dish is the carefully selected mixed beef tongue, which he uses his years of experience to mature carefully selected cuts and grill them at the perfect timing. Customers are also welcome to order dishes other than the set menu, and we also offer Sendai specialties such as triangle-shaped fried tofu and bamboo-shaped kamaboko.
