The owner-chef is Tomohiko Akase. After undergoing rigorous training at a major hotel, he traveled to Italy to further his knowledge of Italian cuisine. He spent a year honing his skills in towns such as Bassano del Grappa in the northeast. Upon returning to Japan, he worked as head chef at a popular restaurant in Osaka for nearly 10 years.
