The course is Omakase-only to ensure you can enjoy the most delicious seasonal ingredients. All dishes are characterized by delicate seasoning to maximize the characteristics of the ingredients. The 'Sea Urchin and Truffle Rice' available in the course is also a dish where the subtlety of the seasoning stands out. This clay pot rice was born after exploration inspired by a risotto eaten in London, focusing on how to express the deliciousness of truffles in Japanese cuisine, and it brings out the truffle flavor to the fullest.
