For our interview, we visited "Mori no Ajidokoro Nakamura," surrounded by nature near the Kikuchi Valley. The shiitake mushrooms that the owner, a shiitake farmer, takes great pride in, as well as the plump nameko mushrooms used in the dumpling soup, are all painstakingly grown on logs. We also enjoy Kyushu's carefully selected local chicken and the light, refined tasting Aigamo duck, grilled over charcoal to bring out the delicious aroma.
