Our restaurant is particular about using local ingredients, and uses fresh pork innards from Miyagi, Yamagata, and Iwate prefectures. Sendai-style grilled innards, which have the same roots as beef tongue, are marinated in a special sauce made with Sendai miso. The secret to their popularity is the unique style of eating them with Sendai soy sauce. ◎ In addition, our "salted beef innards," marinated in a secret salt sauce that has been offered since the restaurant's founding, is a favorite dish of locals.
