The chef uses a mix of six types of raw offal. The ingredients are sourced from Kyushu and are carefully selected to be the tastiest at that time of year. This is the original Hakata offal hotpot, made by simmering fresh offal that can be eaten half-raw and carefully selected vegetables in a soy sauce-based soup that has been the proprietress's secret recipe for over 40 years. This long-established restaurant is also known as the birthplace of the final dish, champon. The champon noodles, which contain soup full of umami, are exquisite.
