Fresh ingredients are ground that morning and procured every day, which are then cut up in the store by our chefs and carefully skewered one by one. Torahachi is particular about ensuring that the meat is not too big or too small. By neatly cutting the meat with a knife, it cooks evenly, resulting in a delicious, crispy outside and juicy inside. The sunken kotatsu style tatami room on the 3rd floor can accommodate parties of up to 54 people! Using removable doors, we can also accommodate parties of 16 people or more for partial private use. This is a signature dish that has remained unchanged since the restaurant first opened. It uses fresh, high-quality Wagyu beef tendon and handmade tofu from Jingu Tofu, a long-established restaurant in Shibuya, Tokyo.
