At 'Echigo Kanouya', we bring you the flavors of Niigata! Our specialty is Hegi Soba, made with funori seaweed, known for its unique texture and smooth finish. It is distinctively served in bite-sized portions on a square wooden tray called a 'hegi'.◎ We also offer a full lineup of other Niigata local dishes, including sweet and savory soy sauce-based tare katsudon, tempura seasoned with Sado salt, and deep-fried Tochio tofu. Please relax and enjoy your meal and drinks in our warm, traditional machiya-style Japanese space. Families are also very welcome!♪
Enjoy delicious hegi soba noodles with a unique texture and smooth throat feel, made with funori seaweed. "Funori soba" is soba noodles that use funori seaweed, a type of seaweed that was used in weaving in this region, as a binder. "Hegisoba" is soba noodles that are uniquely presented in bite-sized portions in a square wooden bowl called "hegi."
Kanouya also offers a wide variety of Niigata local dishes that go perfectly with hegi soba. Enjoy authentic Niigata flavors such as "Tare Katsudon," Niigata's soul food, with its charming sweet and spicy soy sauce, tempura seasoned with Sado salt, and Tochio-age. You can fully enjoy the diverse flavors of Niigata along with your soba.
We offer cold bukkake soba noodles topped with Tochio-age, a specialty of Tochio, the land associated with Uesugi Kenshin. Tochio-age has a history of over 300 years and is now one of Niigata's most famous specialties. We also have a wide variety of other dishes on the menu, such as "Bukkake Wagyu Yamakake Soba" and our signature tempura-topped "Shrimp and Seasonal Vegetable Bukkake Tempura Oroshi Soba."
