Kawayuka (literally 'river floor') dining is a popular summer activity in Japan, where guests sit on elevated platforms by the river, enjoying the sight and sound of rushing water to wash away the heat. Gyunabe Ukon is the first and only Kawayuka-style restaurant in Hakone. In autumn, the maple forest along the Sukumo River turns into a brilliant display of red and yellow. The cool autumn air also invites guests to wrap themselves in Ukon's cotton coats and sit under heaters, making it the perfect season to enjoy Ukon's famous hot pot. The restaurant sources Kuroge Wagyu beef from across Japan, paired with locally grown vegetables from Kanagawa Prefecture. The yam is grown on their own farm on the outskirts of Odawara City and is particularly renowned for its aroma and texture. Additionally, the restaurant places special emphasis on the concept of texture in its cooking. The simmered hot pot broth is infused with yam and egg, adding depth and layers to the flavor. The meat sushi, made with premium ingredients such as sea urchin, caviar, and salmon roe, is drizzled with homemade 'awa-shoyu' (foam soy sauce). This delicious combination of foam soy sauce and meringue is a signature flavor that Ukon takes great pride in.
