The beef tongue we usually use is the tip and middle of the tongue, which are the most abundant parts of one cow. This Tsubo-meshi set meal only uses the tongue base, a rare cut. This Tsubo-meshi set meal has a unique texture that is chewy yet soft. Please give it a try.
