Hanamidori chickens are raised with care in an open chicken coop bathed in sunlight, fed with our original, specially-produced feed. They have no unpleasant odor, a distinct umami flavor, and a chewy texture.
A skilled chef adjusts the temperature and humidity for the day as he simmers the ingredients in a soup made from fresh chicken leg carcasses and whole Hanamidori chicken, which becomes more nutritious the longer it is simmered.
Ponzu sauce made from refreshing daidai citrus juice is essential for mizutaki. It was created by the founder with the desire to "make a ponzu sauce that brings out the umami of chicken."
