Marukan's signature dish, "Soft Dried Fish," has fluffy flesh and crispy skin - it's delicious! By switching between cooling and reheating (steaming), and blowing cold air evenly over the fish, there is almost no unevenness in the drying, and the moisture of the ingredients is evenly extracted from the center, bringing out the flavor of the ingredients.
