Our artisans use seasonal ingredients that are unique to Hokkaido to provide you with delicious food. Although the ingredients vary depending on the season, we offer ingredients sourced from all over Hokkaido, with a focus on eastern Hokkaido, including Kushiro, which is where our restaurant name comes from. In winter, we offer seasonal flavors such as "Matachi" and "Kinki," in summer "Toki-sake," and in autumn "Sanma." Some ingredients are only available on certain days.
