- Store Introduction - A natural Omi cuisine restaurant that makes use of the freshest Omi vegetables and Omi beef, one of Japan's three major wagyu beef brands.More than 100 varieties of Omi vegetables, including those from our own farm in Moriyama City, Shiga Prefecture, and those grown by over 300 farmers in Shiga Prefecture who are certified as environmentally friendly by Shiga Prefecture, are delivered directly to us the same day in our private trucks. From the collection point, our four private trucks drive to the producers early in the morning, purchasing carefully selected ingredients directly from agricultural, fishing, livestock, ranches, poultry farms, breweries, sake breweries, and more. We have created a genuine direct-from-the-farm store that offers the deliciousness of Shiga.
Ka-you's home-grown farm is located in Moriyama City, Shiga Prefecture, an area rich in nature overlooking Lake Biwa and the Hira mountain range. We use our own blended, environmentally friendly, recycled organic compost. We use over 100 types of Omi vegetables, including JAS-certified organic vegetables grown using EM bio technology and environmentally friendly agricultural products certified by Shiga Prefecture, as well as Omi rice, soybeans, and wheat.
They travel to the fields, greenhouses, fishing ports, ranches, poultry farms, and production sites of over 300 farmers in Shiga Prefecture in their own trucks and five light vans, and deliver exclusively Shiga-produced ingredients, such as Omi vegetables, rice, soybeans, wheat, Omi beef, pork, chicken, Lake Biwa fish, specialty products, seasonings, and local sake, via the Kosai Road, Mount Hiei, Kyoto, and the Meishin and Hanshin Expressways, a two-hour trip one way, as quickly as possible on the same day.
Shiga Prefecture has many certified local traditional vegetables. It is also famous as one of the leading turnip producing areas in the country, and brand vegetables originating from Shiga Prefecture are well-known locally. Representative Omi vegetables that are grown in the winter include Hinona vegetables, Kitanosho vegetables, Manki turnips, Akamaru turnips, Ibuki radishes, Yamada nezumi radishes, Hasso yams, Shimoda eggplants, Sugitani eggplants, and Mizuguchi kanpyo.
The only auction of Omi beef in Shiga Prefecture is held at the Shiga Meat Market in Omihachiman City. Hanasama Ka-you, as a participant in the Shiga Meat Center Regional Wholesale Market, obtained the right to buy in January 2015, allowing us to participate in the auction for whole Omi beef carcasses. Furthermore, we obtained a meat sales business license in February, and opened an Omi beef butcher wholesale store.
