The new seasonal menu at JE Kitchen has officially launched, incorporating a variety of acidic elements such as plum wine, Tosazu vinegar, and yuzu, as well as black garlic, sake lees, and fermented glutinous rice, which develop unique acidic aromas through the fermentation process. These are paired with seasonal ingredients like white asparagus and firefly squid, and the meal concludes with a Crème d'Anjou dessert made from dehydrated yogurt. Various layers of acidity play different roles throughout the set menu—awakening the palate, completing the flavor structure, or adding a refreshing touch—perfectly echoing the gradually warming weather ~
