- Restaurant Introduction -
Founded in 1894, the delicious taste of the finest Yonezawa beef has been passed down and refined through generations with the saying 'There is Tokiwa in Yonezawa'

As a long-established Yonezawa beef restaurant with 130 years of history since 1894, we have been visited by guests from both the local Yonezawa area and far beyond. We continue to protect the secret warishita sauce and the delicious taste of the finest Yonezawa beef, passed down through generations with the saying 'There is Tokiwa in Yonezawa.' Please enjoy the legendary 'Yonezawa beef' with the flavors of a long-established restaurant.
In October 1894, Tokiha Beef Shop was opened in Aramachi, Yonezawa City by the founder, Ozaki Shokichi. It is said that at the time, beef was sold from autumn until around June when the snow that had been collected during the winter and packed down in the snow cellars in the north warehouse disappeared. Tokiha, now in its fifth generation, is the oldest beef shop in Yonezawa, and is committed to reliable quality and taste, earning the reputation that "Yonezawa has Tokiha," and has continued to protect the same delicious taste for generations.

The fifth generation owner himself selects the beef with a discerning eye. Since 2015, Yonezawa beef has been limited to "Japanese black heifers" and must be "32 months or older", making it even more of a mythical cow than before. By purchasing the best Yonezawa beef himself, he maintains high quality.

This dish is made with a base of local Yonezawa miso, a moderate amount of sake lees from a specially selected brewery that Yonezawa is proud of, and is aged to create a unique flavor. Tokinamizuke was invented in the late Meiji period, when refrigeration technology was not yet developed, as a way to make it available in Tokyo, far from Yonezawa. This masterpiece, which helped popularize Yonezawa beef, has been purchased by the Imperial Household Agency and has been highly praised since its creation in 1912.
