Enjoy an immersive and authentic experience in the heart of the culinary tradition of the Castelli Romani. This workshop dedicated to "pincinelle" and wine, held among the rows of our estate, will allow you to discover local history and literally get your hands dirty. A sensory journey designed for those who want to explore the food and wine culture of the territory.

The experience begins with a pleasant guided visit of our estate and the vineyards. Walking among the rows with a guide, you will get to the heart of our history and wine production. You'll touch the volcanic soil that gives our products an unmistakable minerality and discover how what you taste in the glass is made. As a perfect welcome, you can enjoy a food tasting of fresh bread accompanied by our extra virgin olive oil and the first glass of wine included in the tasting.

After the tour, the culinary workshop dedicated to the creation and food tasting of pincinelle will begin. This fresh pasta shape embodies a fascinating and ancient history, deeply linked to the humble rural tradition of the Castelli Romani and surrounding areas. During the workshop, you will learn the traditional techniques of kneading and rolling out the dough, shaping this pasta made only from simple and authentic ingredients with your own hands.

The experience will be completed around the table, where you can enjoy the fruits of your labor with a lunch or dinner featuring a pasta food tasting served in two variations. To accompany these two courses, we will continue with the tasting of two more glasses of wine, creating a complete food and wine experience.

You will start with the fresh notes of "Schietto", IGT Lazio Grechetto, continue with the aromatic elegance of "Albagìa", DOC Roma Malvasia Puntinata, and finish on a high with the warmth and structure of "Distinto", IGT Lazio Cesanese.

  • Know Before You Go: GETTING TO THE WINERY BY METRO AND SHUTTLE: Take Metro Line C to "Pantano". Outside the station, you will find the TPL public shuttle (operated by "Corsi & Pampanelli"). Ask to be dropped off at the Via delle Marmorelle stop, located right in front of the estate's entrance (Monday to Saturday).

  • Know Before You Go: REACHING THE WINERY BY TRAIN: From Rome Termini, take the train to "Frascati" or "Colle Mattia". Alternatively, get off at "Galleria Colonna": from there, a path of about 700 meters on foot will take you to the estate. Let us know in advance if you choose this option: the route is not tracked on GPS and we

  • Know Before You Go: we will give you all the useful instructions.
