Kimuraya is a creative Japanese-style izakaya based on Kyushu cuisine. Horse meat is a specialty of Kumamoto, Kyushu, and is perfect for sashimi. It is light, has no strong flavor, and is easy to eat, making it the perfect sashimi dish. At our restaurant, we recommend a 3-item assortment of horse meat sashimi: "Horse meat sashimi loin (healthy lean meat with a soft and elegant sweetness)", "Horse meat sashimi kalbi (meat from the horse's ribs, with three layers of fat and lean meat)", and "Horse meat sashimi marbled meat (melt-in-your-mouth marbled meat)".
