White tonkatsu for fillet, crispy for loin Using different cooking methods, we slow-cook the fillet at a low temperature and finish the loin to be fragrant and crispy. 2. Sourced from Nakaya Breadcrumb Factory We use different breadcrumbs for each cut, varying in sugar content and grain size. 3. Fried in rare mesenteric lard With a higher melting point than regular lard, it ensures the crust turns out perfectly crispy.
