Product Info

— Restaurant Introduction — [A Japanese restaurant where you can enjoy the pairing of local Toyama sake and seasonal dishes in a relaxed atmosphere]

Located just a two-minute walk from Ebisu Station's west exit, you'll find yourself in a tranquil Japanese space after climbing the stairs to the second floor and passing through the noren (traditional Japanese curtain). The owner, Mr. Nosaka, studied under Toshio Tachibana, the former head chef of the Imperial Hotel's Isecho, and honed his skills at various Japanese restaurants in Tokyo. "Washu Washoku Nosaka Ebisu" is highly regarded as a place where you can enjoy delicious Japanese cuisine, primarily using ingredients from the owner's hometown of Toyama, in a relaxed atmosphere. Furthermore, their selection of Toyama's local sake is among the top five in Tokyo, allowing you to enjoy pairings with your meal.
As the name of our restaurant, "Washoku-Washoku-no-Saka," suggests, the essence of our restaurant lies in the pairing of Japanese sake with food. Please enjoy our simple and straightforward cooking methods and seasonings that make the most of the appeal of the carefully selected ingredients themselves, such as seafood carefully selected only from the owner's hometown of Toyama and Toyosu Market, and black-haired Japanese beef and marbled horse sashimi sourced from Miyakonojo in Miyazaki Prefecture. We look forward to welcoming you with hospitality that is attentive to the tastes of our customers who want to indulge in the pairing of sake and Japanese food.

Owner Yoshikazu Nosaka was born and raised in Nyuzen, a town in the northeastern part of Toyama Prefecture facing the Sea of Japan. He trained under Toshio Tachibana, who was head chef at the Isenaga Imperial Hotel branch, a long-established Kyoto cuisine restaurant, and opened Nosaka in Ebisu in 2005, now celebrating its 18th anniversary this year. He cherishes each and every carefully selected ingredient from his hometown of Toyama and around the country, and serves his guests with cooking methods that bring out the flavor of the ingredients themselves and seasonings that are conscious of pairing with sake.
