Chef Haruka Katayanagi's first steak experience is one he will never forget. As time passed, the details became a bit blurry. He does not remember the specific cut of the steak—it might have been a thick sirloin—but his father seasoned it perfectly in a Japanese style, adding butter and soy sauce, a flavor profile he had never tried before.
He described the experience as 'exquisite,' a rare delicacy for his younger self that left a deep impression on his memory.
Years later, while undergoing culinary training, this memory resurfaced when he discovered Wagyu and realized the depth of this ingredient. He subsequently dedicated his life to exploring the infinite possibilities of Wagyu and committed himself to introducing its rich flavor profile to more people. This is the core philosophy of Karyu, the Michelin-starred Wagyu Kaiseki restaurant he operates in Ginza. Since opening his shop in Ningyocho 15 years ago, Chef Katayanagi has remained steadfast in the kitchen, spreading the deliciousness of Wagyu.
The restaurant's name originates from a Zen phrase about beauty, and Chef Katayanagi is dedicated to showcasing the true flavor of Wagyu. He personally visits the butcher every day to hand-pick A4 and A5 grade Kuroge Wagyu from top suppliers across Japan, presenting it in a Kaiseki-style menu that includes a variety of luxurious seasonal ingredients, from vegetables to seafood. Even the tableware is carefully selected to highlight the colors of each ingredient, enhancing the visual dining experience. And what better way to enjoy the rich taste of Wagyu than with a glass of wine or sake personally chosen by Chef Katayanagi? As a trained sommelier, he hand-picks the wines served at the restaurant and skillfully pairs them with each dish.
To allow guests to better appreciate the Wagyu, the restaurant provides counter seating where guests can watch Chef Katayanagi and his culinary team transform exquisite meat into delicious dishes. For those seeking a more private dining experience, the restaurant also features a private room that can accommodate up to eight guests.

The Omakase dinner is centered around the highest quality A4 and A5 Wagyu beef, personally selected by Chef Katayanagi from his nationwide network of suppliers. The course content is decided daily by Chef Katayanagi based on the condition of the ingredients.
