We offer specially made, chewy crepes made with VIRON wheat flour from France. Our galettes are made with a dough made only from buckwheat flour, water, and salt, and the butter added at the end is the secret to their fragrant flavor. Our ripe BJ made with highland bananas is also very popular. And in the evening, we transform into a "crepe bistro and night cafe bōTH"! Our crepe and galette dough is our specialty. We use wheat flour from France for our crepe dough, and after repeated trial and error when we first opened, we have created a crepe dough that is crispy on the outside and chewy in the middle. Our galette dough is made only with buckwheat flour, salt, and water. Some restaurants in France add eggs, but we have also experimented and now we only mix buckwheat flour, salt, and water and let it sit for two days before serving.
