Our restaurant is particular about the size of our oysters, sourcing them from all over the country. In fact, we are particular about more than just the deliciousness of the oysters themselves; we also care about how we eat them. After much trial and error, we have created dishes such as "Oyster Tomato," which is eaten with fresh tomatoes, and "Oyster Sorbet," which is eaten with refreshing citrus sorbet.
