Oven-grilled steak, or "oven-grilled steak," may be one of the best-kept secrets in Japanese cuisine. That’s why it’s even more remarkable that Rogama Steak Arcanum’s head chef Shinya Suzuki can offer oven-grilled steaks at such an affordable price. Few people have mastered the art of beef cooking better than him, having trained at grilled beef restaurant Kamakurayama and later working as a grill expert at the renowned Aragawa in Shinbashi Tamuracho, one of Japan's top steakhouses. After many attempts, he finally developed an affordable oven-roasting method and founded Rogama Steak Arcanum in August 2023.

Only Tamura beef is allowed to be used in the restaurant's grill. Tamura beef is a special subspecies of Tajima beef, which is the ancestor of all Japanese brands of Wagyu beef. Cooked in an oven, the low melting point and rich fat content of Tamura beef make it melt in your mouth.
