We offer multiple courses that allow everyone to enjoy Echizen crab, so that everyone can choose according to the occasion.
It is said that good quality pufferfish has a sweetness that can only be enjoyed for about four hours after it has been killed, so this is definitely something you should try. The tiger pufferfish skin is prepared in bite-sized portions, taking advantage of the characteristics of each part, including the shark skin, the totoumi, and the flesh. The sashimi is ground against the muscle fibers to bring out the full flavor. The course includes dishes that make use of chunks of pufferfish as an appetizer, and a pufferfish hassun, prepared differently each day.
