The pork cutlets are made with high-quality pork from Gunma Prefecture and other areas, and are fried slowly at low temperatures to give them a fluffy and soft texture. The moderate pink color of the cut surface will whet your appetite. The most popular item is the loin "TOKYOX", which has a sweet fat and fine texture. For the fillet, we recommend Matsusaka pork from Mie Prefecture, which has a strong meaty flavor, as well as Kin-ino pork from Awaji Island. We are particular not only about the main meat dish, but also about the seasonings and rice. We offer two types of salt as accompaniment so that you can taste the sweetness of the pork fat. The pale pink salt is a specially made blend of 25 types of salt with a base of rock salt. After comparing various brands of rice, we use Koshihikari rice from Hyogo Prefecture, which we found to be the best match for Butasho's tonkatsu. With the tonkatsu perfectly matched with the salt and the pickles that go well with rice, you will definitely not be able to stop eating. Rice refills are free, so feel free to ask◎
