Ryukyu donburi is fresh sashimi from Oita marinated in sweet soy sauce. It originally originated as a fisherman's meal made by fishermen to preserve the fish they caught. The aroma of Oita's sweet soy sauce, ginger, and fragrant sesame seeds is sure to whet your appetite. There are various theories about the origin of the name, but one is that it was given to Oita fishermen who asked fishermen in Okinawa how to make it and brought it back with them. It is now a popular staple dish in Oita.
"Toriten" is Oita's soul food, born in a diner in Oita city in 1962. In Oita, it is a standard menu item served not only in diner and restaurants, but also in izakaya and cafes. Unlike fried chicken, Toriten is fried by dissolving tempura flour in water, so you can enjoy a crispy batter texture that is different from fried chicken. Try it with a squeeze of kabosu, ponzu sauce and mustard.
