Escape the tourist traps and discover the authentic flavors of Northern Morocco on this specialized organic food walking tour. Tangier is more than just mint tea; it is a hub for fresh mountain produce, wild Atlantic seafood, and ancient culinary traditions.

On this tour, skip the processed foods and focus on "Bio" (Organic) ingredients. Walk through the vibrant markets of the Medina, meeting the women who bring fresh goat cheese from the Rif Mountains, tasting pure honey from local apiaries, and savoring dishes made with seasonal, pesticide-free vegetables.

Start at the farmers' market stalls on the edge of Grand Socco. Focus on seasonal fruit. If it's summer, taste fresh cactus pear (skinned right in front of you). If winter, local tangerines. Learn that in Morocco, "eating seasonally" is the traditional way of life. Enjoy fresh seasonal fruit or a fresh-pressed pomegranate/orange juice (no sugar added).

Next, walk through the alleyways where the Jbala women in striped skirts sell their produce. This is the heart of your tour. These women bring produce from their village gardens no industrial pesticides, just pure farming. Taste Jben (Fresh Goat Cheese) served on a fresh fig leaf or with a piece of barley bread. This is the definition of "Farm-to-Table."

Visit a working wood-fired oven. Discuss the importance of Sourdough (Levain natural) and slow fermentation used in traditional Moroccan bread, which is healthier than commercial white bread. Taste warm, fresh Semolina or Whole Wheat bread dipped in local organic olive oil.

Visit a reputable spice shop/herbalist (like Maison D'Argan in the Kasbah or similar). Taste pure honey (compare the taste of orange blossom vs. mountain thyme honey) and Amlou (almond butter with Argan oil). Learn how to spot fake vs. real Argan oil. Enjoy honey spoon tasting and Amlou with bread.

For lunch, choose between a casual/street option of a bowl of Bissara (Fava bean soup) with olive oil and cumin, or a premium option at Le Saveur de Poisson (or similar), famous for not using Coca-Cola or industrial products—only fresh fruit juices, wild fish, and homemade barley bread. Emphasize that the ingredients are sourced locally that morning.
