Before the sfincione, there is the wheat. And before the wheat, there is a story.
Enter an experiential mill in Sciacca and meet those who work with grains and flour every day, preserving knowledge made up of experience, gestures and memory.
Here you won't start with a recipe, but with its origin.
Take the ancient Sicilian grains in your hands, observe them, and find out what makes them different. Touch the flours, compare their colors, scents and textures, and hear stories about a Sicily where wheat has always been part of everyday life. As you discover how a grain becomes flour, the story expands to include the city. Wheat will take you back in time, to when Sciacca and its loading dock were linked to the routes and trade of the Mediterranean. You will thus discover that the story you hold in your hands belongs not only to the cuisine, but also to the land, the sea, and the memory of the city.
Then it's time to get your hands dirty.
Guided step by step, you'll knead the dough and prepare the traditional sfincione. You don't need to know how to cook: you learn by doing, observing, and being guided by those who have known these steps forever.
As the sfincione cooks, the mill fills with aromas and what you have discovered through the story finally takes shape.
Then we sit down at the table and taste what we have prepared together.
This is where this experience becomes something different from a normal cooking class: you don't just learn a Sicilian recipe. You get to know the people, the ingredients and the knowledge behind it.
From the grain to the flour, from the flour to the dough, from the dough to the table: a different way to get in touch with Sciacca and its culture, through your hands and all your senses.
