The chef masterfully combines classic Yunnan wild mushrooms with both traditional Chinese preparations and innovative Western techniques, creating dishes rich in natural umami and depth of flavor, including Steamed Bean Curd with Minced Shrimp and Morel Mushroom (Lunch), Poached Fish Fillet with Yunnan Mixed Mushrooms in Supreme Stock (Lunch) and Wok-Fried Sliced Pork with Purple Yam, Green Soybeans, and Sparassis Crispa (Lunch). Dinner offers an even more extensive selection, emphasizing Yunnan’s signature mushrooms with creative twists, such as Double-Boiled Chicken Soup with Dried Sea Whelk, Yam, Dates and Morel Mushroom, Wok-Fried Shrimps with Celtuce, Lily Bulb, and Chanterelle, Stir-Fried Beef Tenderloin with Porcini Mushroom, and more.
The chef’s innovative spirit shines through in fusion Western-style hot dishes incorporating Yunnan mushrooms, including Fresh Black Truffle and Wild Mushroom Pizza, Mushroom Chicken Roulade.
The desserts are equally delightful, with the pastry chefs transforming porcini mushrooms into delicious treats, including sea salt caramel porcini ice cream and porcini chocolate cake, adding layers of flavor and a unique aroma to the sweets. Renowned buffet restaurant PLAYT has partnered with renowned Hong Kong brand Lo Hong Ka to create a special Mother’s Day celebration filled with health, beauty, and indulgence. From 1 May to 31 May, guests can indulge in the Nourishing Red Bird’s Nest Dinner Buffet— an experience that brings the finest quality Red Bird’s Nest to the table. Lo Hong Ka’s signature Red Bird’s Nest (also known as Blood Bird’s Nest) is the rarest and most prized variety, prized for its deep ruby hue, superior nutritional profile, and enhanced restorative benefits. It is celebrated for calming the nerves, supporting liver health, improving eyesight, and promoting radiant, youthful skin.
PLAYT’s head chef has thoughtfully infused the premium Red Bird’s Nest into exquisite creations, including Steamed Fish Maw Stuffed with Minced Shrimp and Morel Mushroom (One serving per person), and the classic Chicken Tofu Pudding with Red Bird’s Nest. This silky Sichuan classic offers delicate refinement and mellow taste, this dish has been proudly featured in state banquets, representing the refined elegance of Sichuan cuisine, letting mum and family indulge in fine-dining treasures.
For a perfect sweet ending, the pastry team has created indulgent desserts featuring the premium Red Bird’s Nest, including Red Bird’s Nest & Coconut Gelato, Red Bird’s Nest Mango Sago Pomelo Pudding, and Aloe & Earl Grey Tea Panna Cotta — promising a memorable and nourishing conclusion to this exceptional dining experience.
