We use fresh fish caught in the Genkai Sea. After our chefs have filleted the fish, they press it over hot charcoal just before serving to give it a fragrant finish. The aroma rises up and the flavor is packed into a special taste. Enjoy the fragrant outside and moist texture inside, with a lingering aftertaste that spreads in your mouth. This is our pride and joy, a deliciously grilled chicken with the bone still attached. We regularly source carefully selected brand-name chicken from around the country and slowly grill it over Fukuoka-grown Chikuzen Binchotan charcoal. The far-infrared effect creates a fragrant exterior and a plump, juicy interior. Finished with our homemade roasted salt to bring out the umami, we recommend enjoying it with three condiments: shichimi (seven spices), garlic miso, and yuzu pepper.
We are particular about the charcoal that supports our cooking and use Chikuzen Binchotan charcoal. This high-quality charcoal rivals Kishu Binchotan, and with its stable heat and strong far-infrared effect, it creates a fragrant surface and a plump, juicy interior. It produces little smoke or unpleasant flavors, bringing out the flavor of the ingredients, from seafood and chicken to vegetables. Charcoal, a great supporting actor, adds an extra layer of depth to your cooking.
