The essence of the Poon Choi (a traditional Cantonese dish) is made with abalone sauce: chicken broth (simmered for 10 hours in 90 liters of water with 90-day-old Sanhuang chicken, pork, and pork bones, reduced to 60 liters). This broth is then combined with the following carefully selected ingredients: Lau Fau Shan Yu Hing oyster sauce (made with 100% fresh, plump oyster meat, using the essence of Lau Fau Shan oysters, without any added bean flour or sugar, possessing a natural salty sea flavor, intense oyster taste, and 100% authentic freshness!), Lau Fau Shan Yu Hing oyster sauce, abalone sauce, chicken broth, sesame oil, cornstarch, and soybean oil to create the Ding Ye Abalone Poon Choi sauce.
