discovering all the parts of the tuna that are processed, dried and salted, with their unmistakable flavors. An ancient Sicilian tradition, which continues to this day, for
taste the different parts of the tuna (heart, ficazza, tonnina, lattume, bottarga, bresaola, smoked swordfish) paired, for example, with a Grillo to enhance its flavor or sweetened with a dry Zibibbo with more aromatic characteristics.
