Entrance
Garden vegetable salad. Mixed greens, roasted tricolor peppers, radishes, walnut praline, cranberries, avocado cubes and citrus limonette.
Pacific abalone. Accompanied by a potato tartare, tartar sauce and avocado cubes.
Steak tartare. Knife-chopped beef, citrus tartare, red onion, pickles, capers and cilantro.
Main Course
Vegetarian corn pie. Smooth corn custard with roasted eggplant pineapple and Azapa olives
Fish of the day. Roasted and grilled fish cooked to perfection, served with northern quinoto with sautéed fava beans, spinach pesto, lemon cockles and bisque sauce.
Ribs with 5 Chilean spices by Áurea. Pork ribs cooked sous vide for 12 hours with 5 Chilean spices, served with rustic merquen puree and sautéed vegetables.
Dessert
Crepes. Ice cream of the day, Nutella or manjar
Flan that isn't flan. Homemade flan with caramel and manjar.
Seasonal fruits. Bowl with three kinds of fruit.
