Located in Tatsuno City, Hyogo Prefecture, known as the birthplace of light-colored soy sauce, this brewing experience allows you to immerse yourself in Japanese fermentation culture. The session is led by an instructor who is a nutritionist and active fermentation expert. They will provide easy-to-understand explanations for beginners, covering the ingredients of soy sauce and miso, the mechanics of fermentation, and the history of how soy sauce brewing became rooted in Tatsuno. It is a fun opportunity to learn about the depth of fermentation from a professional perspective. The venue is situated in a historic castle town area designated as a National Important Preservation District for Groups of Traditional Buildings, where the beautiful townscape often referred to as 'Little Kyoto' still remains. During the experience, you can enjoy 'My Soy Sauce Making,' where you add natural dashi and spices to freshly pressed raw soy sauce, or 'Miso Ball Making,' where you mix dried vegetables into Banshu miso rich in koji. You will deepen your understanding of the ingredients and production methods of soy sauce and miso through hands-on activities. In the 'My Soy Sauce Making' session, you will compare flavors to appreciate the differences in aroma and taste, and complete your own original soy sauce. In the 'Miso Ball Making' session, you will create miso balls that allow you to enjoy authentic miso soup just by pouring hot water, making it easy to enjoy the taste of fermentation at home. Although the duration is short at about 1 hour, it is a fulfilling experience that lets you touch upon the charm of fermentation and the local food culture.
