  • The owner personally selects coffee beans that have been meticulously managed from cultivation and harvest to transport, sourced from origins around the world! To ensure you taste high-quality coffee—known as 'specialty coffee'—that is rich in its original flavor, the owner roasts and brews it personally. Since the flavor changes drastically depending on the roast intensity and duration, you will adjust the roast level based on your preferred taste and aroma. Come and experience the profound world of coffee. Located in a certain spot in the Shitori district of Minamiawaji City, where idyllic pastoral landscapes spread out. After getting out of the car and walking for 2 minutes along a country path surrounded by trees, you will find the Awaji Island Coffee Laboratory 'BASE COFFEE,' located on the premises of 'Fuku Cafe,' a hidden-away old folk house cafe. If the cafe is a hideaway, this laboratory has the atmosphere of a 'secret base.' Obsessed with the depth of coffee as a luxury item and its endless charm, the owner continues to research and study daily to understand coffee more deeply and to pursue the creation of 'coffee that makes people smile and want to talk about it.' This owner carefully selects coffee beans from origins around the world, including Central and South America, Africa, and Asia, with thorough management from cultivation to harvest and transport. Using these top-quality beans, you will experience the roasting process, which is the most important step in determining the taste and aroma of coffee. For the roasting process, we use a roasting pan called a 'Mankashakasha,' which is actually used in Ethiopia, one of the countries from which we source our beans. Perhaps you might want to roast it lightly to bring out a fruity aroma and acidity like citrus, or roast it deeply to bring out a chocolate-like richness and bitterness, or maybe aim for something in between. In any case, it is challenging because you must ensure heat is conducted thoroughly to the center to remove the moisture contained in the green beans. Also, with hand-pan roasting, even if you choose the same beans and try to do it the same way, the heat conduction changes depending on how the beans roll and how the air hits them, so no two roasts will ever taste the same, creating an original flavor. Our staff will give you a thorough lecture, so please feel free to challenge yourself with confidence. When you cool the roasted beans and grind them with a coffee mill, a variety of scents will rise, led by aromas of nuts, caramel, and citrus. This is the moment when coffee beans release the most fragrance in their entire life. There are hundreds of elements in that aroma, which become a complex and rich coffee bouquet that fascinates many people. Then comes the finishing process. Pour hot water over the fragrant freshly ground beans to extract their aroma and flavor to the fullest, but there is also a proper way to pour the water. When you take a sip of the carefully and meticulously brewed coffee, your face will surely soften, and you will naturally smile. *One serving will be used from the beans you roasted and ground for tasting, but you can take the remaining beans home with you.

  • ・The coffee liquid in the consumer's (the person drinking the coffee) cup must have a wonderful, delicious flavor, and be coffee that the consumer evaluates as delicious and satisfying. ・It must have distinct and impressive flavor characteristics, refreshing and bright acidity, and a lingering coffee sensation that fades with a sense of sweetness. ・A consistent system, process, and quality control must be thorough at every stage from the coffee bean (seed) to the cup. (From seed to cup) More specifically, it means 'green beans that have been properly managed in terms of cultivation, harvest, production processing, sorting, and quality control in the producing country, with very few defective beans mixed in,' 'roasted beans that have been roasted without deterioration due to proper transport and storage, and show no signs of defective beans,' and 'properly brewed so that the wonderful flavor characteristics of the production area are expressed in the cup.' These conditions are defined as 'Specialty Coffee' by the Specialty Coffee Association of Japan (SCAJ).   • At the SCAJ World Specialty Coffee Conference and Exhibition, one of the leading specialty coffee events in Asia held annually at Tokyo Big Sight since 2005 by the Specialty Coffee Association of Japan, where industry professionals and all kinds of coffee-related products from producing countries and regions such as Central and South America, Africa, and Southeast Asia gather, famous roasters and baristas invited from Japan and abroad take the stage for various events and demonstrations. In the various competitions held on stage, intense battles are fought for the title of Japan's best. In the Roast Masters Team Challenge (National Coffee Roasting Championship) held at the same event in 2021, the China-Kansai team, consisting of 5 members including the owner, achieved a historic first in SCAJ history by winning both the '1st Place Jury Award' and the '1st Place Audience Award,' taking the championship.
