Uosaburo is a long-established Kyoto cuisine restaurant that has been cherished for over 250 years in Fushimi, Kyoto, a charming area steeped in history and tradition.
The interior, filled with tradition and elegance, features private rooms for all guests. The beauty of the Japanese garden visible from the first floor is breathtaking, allowing you to feel the breath of nature through the changing seasons.
From tea and rice to the essential dashi broth, we use 'Fushimizu,' the famous water of Fushimi drawn from our own well, and carefully selected seasonal vegetables for our ingredients.
 
- Tradition -
Uosaburo was founded in 1764 (the first year of the Meiwa era in the Edo period) by the first owner, Saburobei, who hailed from Sanuki.
During the Battle of Toba-Fushimi at the end of the Edo period, when the new government army clashed with the shogunate forces, it is said that the Shinsengumi, stationed on Kyomachi-dori street in front of Uosaburo, charged with swords against the Satsuma domain army armed with firearms. Bullet marks from the battle at that time are still preserved on the front lattice. (Please check the third image.)
At the time of the Battle of Toba-Fushimi, Saburobei served as the kitchen manager for the Imperial Army.
As a restaurant that Fushimi is proud of, the 9th generation owner now keeps that tradition and skill alive and shining.
